
Olive, Garlic, & Lemon Chicken

This is an extremely delicious chicken thigh recipe utilising black olives, garlic, and lemon juice. The merging of those three ingredients, along with the subtle hint of the thyme, makes for an excellent meal which is easy to prepare. Everything is prepared in a single pan, allowing for quick cleanup afterwards too!

- 0.5 Onion
- 100 mL Chicken Stock
- 1 Garlic clove(s)
- 1 bunch Fresh thyme leaves
- 1 tablespoon(s) Olive Oil
- 1 handful(s) Black Olives
- 2 Chicken thighs
- Black Pepper
- Sea Salt

Directions
- Preheat oven to 350 degrees F/180 degrees C.
- Thinly slice the onion and crush the garlic.
- Chop the fresh thyme.
- Squeeze the juice of half a lemon.
- Halve the black olives.
- Slice the other half of the lemon and remove the seeds from the slices.
- Heat 1 tablespoons of olive oil in a large casserole pot over a high heat. Add the chicken thighs and brown them on all sides. Remove the chicken thighs and set aside.
- Add the onion to the pot and cook until soft—approximately 3 minutes—making sure to scrape all the delicious chicken bits off the pan while cooking them.
- Add the garlic and cook for approximately a minute. Season with sea salt and freshly ground black pepper.
- Add the chicken stock, thyme, and lemon juice and return chicken thighs to the pot, skin side up.
- Bring to a simmer and then put the pot, covered, in the hot oven for about 20 minutes.
- Remove lid and add halved olives and lemon slices. Bake for another 15 to 20 minutes, uncovered.
- Serve the chicken with the garlic, olive, and lemon sauce, as well as with some of the lemon slices and some steamed greens on the side.
