Kofta is the word for meatballs in the Middle East and South Asia. This beef Kofta recipe in a warming curry sauce is a really simple one and it's such a tasty quickly prepared meal. Lamb Kofta is also really nice so you can swap the beef with lamb mince if you wish.
This recipe makes enough for 2 so it's a good one to have leftovers for lunch the next day or why not do some food prep - double the recipe and freeze some portions for another day! x

- 300 grams Minced Beef
- 1 inch piece Ginger
- 1 teaspoon(s) Chilli Powder
- 0.5 Onion
- 1 Tinned Tomatoes
- 1 tablespoon(s) Curry powder
- Black Pepper
- Sea Salt

Directions
- Finely chop the onion.
- Finely grate the ginger and garlic.
- Place the mince in a bowl along with the grated ginger, garlic, and chilli powder. Season with sea salt and freshly ground black pepper, and mix using your hands until well combined. Shape the mixture into golfball-sized pieces and set aside.
- Heat 1 tsp olive oil in a large pan on a medium heat and fry the onion until softened, about 4-5 minutes.
- Add the tinned tomatoes and curry powder and bring to the boil. Reduce the heat, season and leave the sauce to simmer.
- Meanwhile heat another tsp of olive oil in another large frying pan. Fry the meatballs, in 2 batches if the pan isn't big enough, for 2-3 minutes and turn during cooking until lightly browned all over.
- Place the meatballs carefully into the sauce and simmer very gently for 15-20 minutes, turning occasionally during cooking, until the meatballs have set and the sauce has reduced nicely. Serve immediately with a drizzle of yogurt and cauliflower rice or quinoa if you wish.
