
Zucchini pasta with chicken & pesto

This is my favourite healthy pesto recipe! It doesn't contain parmesan like traditional pesto so it's a lot healthier and SO yummy! It works perfectly with the zucchini pasta and chicken for a quick and comforting dinner.

- 25 grams Pine nuts
- 1 bunch Fresh Basil leaves
- 1 Garlic clove(s)
- 2 tablespoon(s) Olive Oil
- drop(s) lemon juice
- Sea Salt
- 4 Zucchini
- 2 Chicken Breast
- 1 teaspoon(s) Coconut Oil

Directions
- For the pesto:
- Put the pine nuts, basil leaves, olive oil, garlic and pinch of sea salt into a food processor. Blitz all together for a few minutes.
- Spiralise the Zucchini.
- Heat 1/2 tsp coconut oil in a large pot and add the spiralised zucchini. Leave to cook for about 15 mins until softened, then drain off any excess liquid.
- Meanwhile, chop the chicken breasts. Heat 1/2 tsp coconut oil in a frying pan and add the chicken. Season with sea salt and freshly ground black pepper. Cook until done.
- Add the cooked chicken and pesto into the softened zucchini, mix all together and enjoy!!
