These protein pancakes are magic! With just eggs and protein powder in the batter, they are a super way to start your day with your macro proportions in check! And they're delicious too!

  • 1 teaspoon(s) Desiccated Coconut
  • 35 grams Whey Protein Powder
  • 50 grams Greek yogurt
  • 0.5 Banana(s)
  • 1 teaspoon(s) Coconut Oil

Directions

  1. Mix together the eggs and whey protein powder, using a food processor ideally or handheld whisk.
  2. Next make some flavoured yogurt to go with the pancakes. Mash the banana (make sure it's ripe) and mix with the greek yogurt. 
  3. Add the desiccated coconut and mix everything together well.
  4. Heat a non-stick frying pan over a high heat and when hot add a teaspoon of coconut oil.
  5. Pour half the batter into the hot pan, swirl it around a bit, and cook for a minute on each side until golden brown.
  6. It's nice to have it a bit gooey still in the centre!
  7. Slide the pancake onto a plate and repeat with the remaining batter.
  8. Serve the 2 pancakes with the flavoured yogurt and a few blueberries on top and tuck in!
