These scones are a delicious Paleo treat, and very simple to make! Feel free to vary the dried fruit chopped dates, dried apricots or sultanas would make for a lovely alternative!

- 1 tablespoon(s) orange zest
- 1 teaspoon(s) Salt
- 1 Egg(s)
- 1 teaspoon(s) Bicarbonate of Soda (baking soda)
- 2 teaspoon(s) Honey
- 3 teaspoon(s) Desiccated Coconut
- 60 grams Dried Cranberries
- 250 grams Ground almonds

Directions
- Preheat oven to 375 degrees F/180 degrees C.
- Mix together the honey and egg in a large bowl.
- Stir in the remaining ingredients and use your hands to bring the mixture together into a dough.
- Tip onto a work surface dusted with almond flour and knead briefly.
- Shape into ½ inch thick scones with your hands or with a scone cutter if you have one!
- Bake on a floured or greased baking tray for about ten minutes or until cooked through.
