
Shepherd's Pie

We've replaced white potatoes with sweet potatoes in this version of shepherd's pie because they are loaded with antioxidants and fibre.
This makes a large batch so freeze the leftovers for another day!

- 900 grams Minced Beef
- 2 tablespoon(s) Olive Oil
- 4 Garlic clove(s)
- 1 Onion
- 2 Carrot(s)
- 200 grams Mushrooms
- 400 grams Frozen peas
- 140 grams Tomato puree
- 2 tablespoon(s) Balsamic vinegar
- 1 large bunch fresh rosemary
- 1 bunch Fresh thyme leaves
- 4 Sweet Potato(es)
- 1 Lime
- Sea Salt
- Black Pepper

Directions
- Preheat your oven to 350 degrees F/180 degrees C.
- Chop the onion and crush the garlic.
- Chop the carrots into dice.
- Thinly slice the mushrooms.
- Roughly chop the rosemary and thyme.
- Thaw the frozen peas.
- Add 1 tablespoon of olive oil to a large frying pan over a high heat. Brown the minced beef and then remove from the pan and set aside.
- Add another tablespoon of olive oil to the pan and add the onion, garlic, carrots, and mushrooms. Cook until the carrots are soft and onions are translucent.
- Add the meat back to the pan, and add the tomato paste, balsamic vinegar, rosemary, and thyme. Season with sea salt and freshly ground black pepper.
- Cook until all of the excess liquid has cooked off and then stir in the peas.
- Meanwhile make the sweet potato mash.
- Peel the sweet potatoes and quarter them. Place in a large heatproof bowl and add two lime halves.
- Cover the bowl in cling film and cook in the microwave for 10-15 minutes or until the sweet potatoes are soft.
- Remove the lime halves with a tongs as they will be very hot!
- Mash the sweet potatoes with a masher.
- Pour the meat mixture into a large baking dish.
- Spread the sweet potato mash on top of the meat mixture.
- Bake the shepherd's pie for 15 to 20 minutes, or until the sides are bubbling and the centre is piping hot.
