This is one of the best stuffed chicken breast recipes we've tried. A combination of delicious ingredients stuffed inside a moist chicken breast - you can't go wrong!

- 1 Lemon
- 1 sprig(s) fresh rosemary

Directions
- Preheat your oven to 180 degrees C/350 degrees F
- Slice the bacon into strips.
- Finely chop the red onion.
- Chop the apple into dice, keeping the skin on.
- Finely chop the rosemary leaves.
- In a frying pan cook the bacon on a medium heat until it is almost crispy, then add the onion and continue to cook until the onion become soft.
- Add the apple, rosemary, spinach, and the juice of 1 lemon and continue to cook until the spinach wilts.
- Once wilted remove the pan from the heat.
- Butterfly open the chicken breast, lay a piece of cling film over the chicken and then pound it down with a rolling pin or the back of a frying pan to about 1/4 inch thickness.
- Remove the cling film and season the chicken with sea salt and freshly ground black pepper. Spoon some bacon and spinach mixture into the centre of the chicken breast, making sure not to overload it.
- Roll the chicken breast into a tight roll lengthwise and secure with kitchen twine every inch or so to ensure it stays closed during cooking.
- Place the chicken onto a baking tray, drizzle with olive oil, and bake in the oven until the chicken is cooked all the way through, about 15 - 25 minutes.
- Remove from the oven and cut off the twine, garnish with the remaining stuffing and serve with some salad or steamed greens on the side.
