
Pan-Fried Trout with Kale

You’ll find trout in most good fishmongers these days. Trout is a fairly lean fish. The bacon adds fat and flavour to this dish and pairs nicely with the kale.

- 2 slice(s) Bacon
- 1 Lemon
- 1 Trout fillet(s)
- 1 large bunch Kale
- Sea Salt
- Black Pepper
- 1 tablespoon(s) Fresh dill

Directions
- Chop the bacon into pieces.
- Cook the bacon pieces in a large pan over medium heat until crispy.
- Transfer to a plate and set aside.
- Sauté the trout in the bacon fat in the pan until golden brown, firm, and opaque, about 7 to 10 minutes.
- Transfer the fish to a plate and keep warm.
- Chop the kale and sauté it in the same pan for 4 to 6 minutes, until limp.
- Season with sea salt and freshly ground black pepper and chopped dill. Don’t overcook, as this will cause it to become tough and bitter.
- Place the kale on your plate, scatter over the bacon pieces, and serve the fish on top. Sprinkle all with lemon juice and zest.
