Pan-Fried Trout with Kale

You’ll find trout in most good fishmongers these days. Trout is a fairly lean fish. The bacon adds fat and flavour to this dish and pairs nicely with the kale.

  • 2 slice(s) Bacon
  • 1 Lemon
  • 1 Trout fillet(s)
  • 1 large bunch Kale
  • Sea Salt
  • Black Pepper
  • 1 tablespoon(s) Fresh dill

Directions

  1. Chop the bacon into pieces.
  2. Cook the bacon pieces in a large pan over medium heat until crispy.
  3. Transfer to a plate and set aside.
  4. Sauté the trout in the bacon fat in the pan until golden brown, firm, and opaque, about 7 to 10 minutes.
  5. Transfer the fish to a plate and keep warm.
  6. Chop the kale and sauté it in the same pan for 4 to 6 minutes, until limp.
  7. Season with sea salt and freshly ground black pepper and chopped dill. Don’t overcook, as this will cause it to become tough and bitter.
  8. Place the kale on your plate, scatter over the bacon pieces, and serve the fish on top. Sprinkle all with lemon juice and zest.
