Harissa Chicken with Sweet Potato Mash

Harissa is a North African hot, aromatic paste made from roasted red peppers, chillies and other spices.

It is absolutely delicious as a dip or sauce to go with lots of things, so it's a good idea to make the whole batch and store it in the fridge. It will last for 3-4 weeks in the fridge.

  • 4 Red pepper
  • 2 tablespoon(s) Tomato puree
  • Olive Oil
  • 3 Fresh red chilli
  • 4 Garlic clove(s)
  • 1 tablespoon(s) Ground Cumin
  • 1 tablespoon(s) smoked paprika
  • 2 tablespoon(s) Red Wine Vinegar
  • Sea Salt
  • Black Pepper
  • 1 Chicken Breast
  • 250 grams Sweet Potato(es)
  • 1 Lime
  • Dark Soy Sauce
  • 1 bunch Fresh Coriander

Directions

  1. Preheat the oven to 400F/200C.
  2. De-seed and dice the red peppers.
  3. Place them in a roasting tray, drizzle with a teaspoon of olive oil and roast in the oven for 30-40 minutes.
  4. Meanwhile, de-seed the chillies and place in a food processor along with the peeled garlic cloves, the cumin, smoked paprika, tomato puree, and 1/2 teaspoon sea salt. Blitz until it forms a smooth paste.
  5. Now add the roasted red peppers and vinegar and blitz again until smooth. Set aside while you prepare the chicken and sweet potato.
  6. Season the chicken with sea salt and freshly ground black pepper and rub with 1 teaspoon olive oil.
  7. Place in a baking dish and bake in the oven for 15-18 minutes until cooked through.
  8. Meanwhile, wash the sweet potato and chop into 1 inch chunks. Place in a large glass bowl and add half a lime.
  9. Cover with cling film and microwave on full power for 15 minutes. Remove from microwave and carefully remove the cling film.
  10. Carefully discard the lime half and mash the sweet potato with a fork or potato masher.
  11. Season with a dash of soy sauce and stir through some chopped fresh coriander.
  12. Once the chicken is cooked, serve with a generous tablespoon of Harissa paste on top and the sweet potato mash on the side.
