Harissa is a North African hot, aromatic paste made from roasted red peppers, chillies and other spices.
It is absolutely delicious as a dip or sauce to go with lots of things, so it's a good idea to make the whole batch and store it in the fridge. It will last for 3-4 weeks in the fridge.

- Preheat the oven to 400F/200C.
- De-seed and dice the red peppers.
- Place them in a roasting tray, drizzle with a teaspoon of olive oil and roast in the oven for 30-40 minutes.
- Meanwhile, de-seed the chillies and place in a food processor along with the peeled garlic cloves, the cumin, smoked paprika, tomato puree, and 1/2 teaspoon sea salt. Blitz until it forms a smooth paste.

- Meanwhile, wash the sweet potato and chop into 1 inch chunks. Place in a large glass bowl and add half a lime.
- Cover with cling film and microwave on full power for 15 minutes. Remove from microwave and carefully remove the cling film.
- Carefully discard the lime half and mash the sweet potato with a fork or potato masher.
- Season with a dash of soy sauce and stir through some chopped fresh coriander.
- Once the chicken is cooked, serve with a generous tablespoon of Harissa paste on top and the sweet potato mash on the side.
