
Turkey Burgers with Sweet Potato Mash

Turkey burgers are much lower in calories and fat than beef burgers and with the right seasonings they are just as good! Ground turkey breast is the leanest option for buying the turkey mince.
Serve the burgers on a bed of baby spinach and some sweet potato mash on the side is a delicious accompaniment!

- Coconut Oil
- 200 grams Turkey Mince
- 0.25 teaspoon(s) Onion powder
- 1 teaspoon(s) smoked paprika
- 0.5 teaspoon(s) ground coriander
- 0.5 Onion
- Sea Salt
- Black Pepper
- 1 Lime
- 0.5 teaspoon(s) Dijon Mustard
- 1 handful(s) Baby Spinach
- 200 grams Sweet Potato(es)

Directions
- Finely chop the onion.
- Add the turkey mince, onion powder, smoked paprika, coriander, dijon mustard, pinch of sea salt and freshly ground black pepper, and onion to a large bowl and stir to combine.
- Use your hands to form into 2 burger patties.
- Heat 2 teaspoons of coconut oil in a frying pan over a medium-high heat and when hot cook the burgers for 5-6 minutes on each side, or until cooked through.
- Meanwhile, wash the sweet potato and chop into bite-sized chunks. Add to a large glass or ceramic bowl along with half a lime.
- Cover the bowl with cling film and microwave for 12-15 minutes until the sweet potato has softened.
- When you remove the cling film (be careful as the steam will be very hot!), discard the lime half and mash the sweet potato with a fork. Season with some sea salt and freshly ground black pepper.
- Serve the burgers over baby spinach leaves and the sweet potato mash on the side.
