  • 1 bunch Kale
  • 1 tablespoon(s) Olive Oil
  • 0.5 Lemon
  • 1 pinch(es) Sea Salt
  • 1 pinch(es) Black Pepper
  • 1 Chicken Breast
  • 1 handful(s) Pine nuts
  • 1 tablespoon(s) Coconut Oil

Directions

  1. Wash kale and remove the leaves from the woody stems. Slice leaves thinly.
  2. Pan-­fry or grill the chicken breast in 1 tablespoon of coconut oil until cooked through and then slice into strips.
  3. Toast the pine nuts in a dry pan over a medium heat until golden. Remove from heat.
  4. In a large bowl, combine the kale, olive oil, juice of half a lemon, sea salt and freshly ground black pepper. Toss to coat leaves evenly.
  5. Add the chicken strips and toasted pine nuts to the salad and toss again. Serve immediately.
