- 1 bunch Kale
- 1 tablespoon(s) Olive Oil
- 0.5 Lemon
- 1 pinch(es) Sea Salt
- 1 pinch(es) Black Pepper
- 1 Chicken Breast
- 1 handful(s) Pine nuts
- 1 tablespoon(s) Coconut Oil

Directions
- Wash kale and remove the leaves from the woody stems. Slice leaves thinly.
- Pan-fry or grill the chicken breast in 1 tablespoon of coconut oil until cooked through and then slice into strips.
- Toast the pine nuts in a dry pan over a medium heat until golden. Remove from heat.
- In a large bowl, combine the kale, olive oil, juice of half a lemon, sea salt and freshly ground black pepper. Toss to coat leaves evenly.
- Add the chicken strips and toasted pine nuts to the salad and toss again. Serve immediately.
